ALMOND AND HEMP ENERGY BITES


Raw, vegan and healthy, these energy bites are made with six wholesome ingredients: almond butter, oats, dates, hemp seeds, almonds, cinnamon and a dash of salt. They are super easy to make, delicious and perfect to enjoy on-the-go or to satisfy that sweet tooth after a meal! 


Hemp seeds are a great source of omega 3 and 6 and are a high quality complete protein. Adding them to your lifestyle will ensure that you are packing in some goodness in your diet! They also contain high concentrations of vitamins and minerals such as iron, Vitamin E, thiamine, riboflavin, folic acid and many other micro-nutrients that your body needs. 


INGREDIENTS:

  • 1/3 cup of almond butter
  • 1/3 cup of medjool dates (or 3 tablespoons of maple syrup or raw honey)
  • 1/4 cup almonds
  • 2 teaspoon of cinnamon
  • Pinch of salt


INSTRUCTIONS:

1. Combine all of the ingredients in a food processor and blend until everything is mixed together and looks like a thick dough.

2. Scoop out rounded tablespoon amounts and carefully form into balls. 

3. Roll in extra hemp seeds or grounded almonds (optional). 

4. Store leftovers in a well-sealed container in the refrigerator up to 1 week or in the freezer up to 1 month.


POSSIBLE VARIATIONS:

There are many ways that you can customize this energy bites recipe, so feel free to get creative!  For example, you can try to:

Make energy bars: Press the mixture firmly into a parchment-lined 8×8-inch baking pan, chill, and then slice into energy bars (instead of rolling the mixture into balls).

Use a different nut or seed butter: Use peanut butter, cashew butter, sunflower seed butter, or any other nut/seed butters that you prefer in place of almond butter.

Omit the hemp seeds: In case you don’t like hemp seeds, you can use flax seeds or chia seeds instead. 

Add spices: For extra flavour, feel free to add in a few pinches of pumpkin pie spice or nutmeg.
