These apple cinnamon and almond butter oatmeal muffins are simple, wholesome, and satisfying. Made with fresh apples, applesauce, oats, zero refined sugar and almond butter for an extra boost of protein and flavour. They have a hearty texture and I can guarantee you will be feeling good eating one or two, or even three!
INGREDIENTS
Wet ingredients
- 1/2 cup creamy natural almond butter
- 2 eggs (or flax egg)
- 1/2 cup unsweetneed apple sauce
- 1/4 cup pure maple syrup
- 1 teaspoon vanilla extract
- 1 cup unsweetened almond milk
Dry ingredients
- 2 cups old fashion whole rolled oats, gluten free if needed
- 1 teaspoon baking powder
- 2 teaspoons cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon allspice
- 1/4 teaspoon fine grain sea salt
- 1 medium apple (finely diced)
INSTRUCTIONS
- Preheat the oven to 350 degrees. Line a 12 cup muffin tray with muffin liners or spray with nonstick cooking spray.
- In a medium bowl, mix together the almond butter, applesauce, eggs, maple syrup, vanilla and almond milk until smooth and combined.
- Fold in the dry ingredients: rolled oats, baking powder, cinnamon, nutmeg, allspice and salt. Stir well to combine. Fold in the finely diced apples.
- Evenly distribute the batter between the muffin liners and bake for 25-30 minutes or until golden brown on top. Use a toothpick to check if the inside is cooked. I love serving mine warm and topping it with extra nut butter.
RECIPE NOTES
Vegan: You can use flax egg, banana or extra applesauce instead of eggs.
Feel free to use any nut butter that you'd prefer in these oatmeal muffins. Almond butter, peanut butter and pecan butter are all great options.
You can also easily freeze these muffins. Allow them to cool completely after baking, then place them in an airtight container or reusable bag and freeze for up to 3 months. Once ready to eat, you can microwave them for 45 seconds to 1 minute or until warm.
